I grew up next to a wood-oven pizza restaurant that my family would visit weekly, and Cecconi's wood-fired spicy salami pie captured my nostalgia. Each floppy slice had a satisfyingly smoky and charred bottom, adding some great texture. "They're coming down here and then coming straight here to try mochi pizza for the first time. It's pretty great." "It was not easy to do. We scrapped it for probably a year and a half, we stopped and I just said 'I can't do it...it cannot be done," shared Mahler.

"It's a pizza made entirely of Japanese rice flour, and kind of a mix of different rice flours, but primarily Japanese rice flour," shared Chef Ty Mahler, the Co-Founder of Mochiko Mochi Pizza. "The goal was to get a crispy outside, but still a chewy inside like mochi." My drink had a lovely sunny hue that brightened up the very cloudy LA day, with flavors to match. The octopus had a soft texture — no easy feat with such a tricky protein. But the meat was so charred on the outside that it completely overwhelmed the flavor. We were seated next to the wraparound bar in front of one of the doors that opened up to the patio.

The latest location serves out of Topanga Social in Woodland Hills. Thanks Pizza is some of LA’s unfussiest pizza, but it is pie-making at its best.
